"Busy Babe" Egg Cups
What you’ll need:
Non stick muffin pan
1 dozen organic eggs
1 cup sweet potato,
diced and sautéed
2 cups spinach
12 slices of uncured bacon
Everything bagel seasoning
**Optional: red chili flakes
Instructions:
1. Preheat oven to 400 degrees, cook bacon for 10 minutes and then place on paper towels to cool slightly. Line muffin tins with the half cooked bacon
2. Whisk together the eggs, then add the spinach. Pour 1/4 cup of egg mixture into each muffin tin and then top with 1 spoonful of sweet potatoes.
3. Srinkle everything bagel seasoning & chili flakes on top. Bake for another 15 minutes and enjoy! allow to cool completely before storing in an airtight container. They last in the fridge up to 4-5 days!
