Banana Quinoa Breakfast Bake
(makes 3-4 servings)
What you’ll need:
½ cup quinoa
1 cup nondairy milk
1 teaspoon vanilla
dash of cinnamon
pinch of salt
½ banana, sliced
½ teaspoon of cinnamon
1 T. coconut sugar
1 tablespoon coconut oil
Instructions:
1. Add quinoa, non-dairy milk, cinnamon, salt and vanilla to a saucepan and bring to a boil. Cover and turn heat to low, cook for 15 minutes.
2. While quinoa is cooking, melt coconut oil in a pan and sauté the bananas with the coconut sugar until caramelized, about 5-10 minutes.
3. Once quinoa is cooked, pour into a coconut oil greased skillet, top with bananas and sprinkle a little more coconut sugar on top.
4. Bake at 350 degrees for 10 minutes or until golden brown on the top. Top with walnuts, peanut butter or a drizzle of maple syrup. Enjoy!
