Gut-Healing Collagen Waffles
1/2 cup Simple Mills pancake mix
`2 eggs (can sub chia egg)
½ of a banana, mashed
2/3 cup non dairy milk
1 T. melted coconut oil (or butter)
1 scoop collagen protein
1 teaspoon vanilla
dash of cinnamon
pinch of salt
1. Combine all ingredients in a bowl and stir until smooth.
2. Pour half of batter into a preheated waffle iron (greased with coconut oil if necessary)
3. When golden brown- remove from waffle iron and pour the rest of the batter to make the second waffle.
4.Top with almond butter, dark chocolate, a light drizzle of maple syrup or coconut whipped cream!
*Can easily be prepped ahead of time and stored in the freezer for your own healthy toaster waffles :) just make sure to let them cool on a wire rack and then store in an airtight container in the freezer until ready to toast!
