Peanut Butter Protein Bites
What you’ll need:
1/2 cup creamy salted peanut butter
2 T. maple syrup
2 T. melted coconut oil
1 tsp vanilla extract
3-4 tbsp collagen peptides
5- T. coconut flour
1 T. maca powder (optional but highly recommended for its hormone-balancing magic!)
Outer Chocolate Layer-
1 tbsp coconut oil
1 dark chocolate bar (I love Eating Evolved!)
Instructions:
1. Whisk together creamy peanut butter, maple syrup, coconut oil and vanilla extract in medium-sized bowl. Pour in collagen and coconut flour, & stir thoroughly.
2. Form dough into smaller, 1-inch thick balls and lay on parchment paper inside flat dish. Once all dough has been shaped, place in freezer for about 10 minutes to chill/harden.
3. For chocolate layer, melt coconut oil and broken up chocolate bar in small pot over the stove or in microwave safe bowl for 30-sec intervals until completely liquid, stirring in between.
4. Once the balls have hardened, remove from freezer and dip in melted chocolate, making sure excess chocolate drips back into bowl before putting them back onto parchment paper.
5. Place them back in the freezer to harden for 15-20 minutes. E N J O Y ! *store in airtight container in freezer for up to several weeks.
