Lettuce Wrapped Shrimp Tacos
(makes 4-5 servings)
What you’ll need:
1lb shrimp, peeled and devained
1/4 cup avocado oil
1 t. chili powder
1 t. paprika
1 t. cumin
2 T. cholula hot sauce (can sub any hot sauce)
Toppings:
fresh cilantro
guacamole or avocado
your favorite salsa
diced sweet potatoes
whatever you can think of!
1. Miix the oil, spices and hot in a bowl and then add shrimp and toss until well coated. Let marinate in the fridge for 20 mins at least (can marinate for up to 2 hours)
2. While shrimp are marinating, prepare lettuce cups by pulling apart a head of romaine lettuce. You can also use gluten-free tortillas if you want!- it's up to you!
3. Heat a skillet on medium high and pour the shrimp into the pan. Cook for about 4-5 minutes or until the shrimp are no longer translucent.
4. Remove from heat and place in a serving bowl until ready to eat! You can make your own taco bar and serve them up yourself! Get creative with the toppings- my favorite way to eat them is with some extra hot sauce and lots of guac!
