5-Minute Greek Salad
4-6 oz. chicken, chopped
*can sub any kind of protein!
1/2-1 cup chopped cucumber
1/4 cup chopped cherry tomatoes
2 T. chopped olives
1/4 cup chopped artichoke hearts
1/4-1/2 an avocado
1 cup romaine lettuce, chopped
Drizzle of olive oil + red wine vinegar
Salt to taste
Throw all ingredients into a bowl, give it a toss and you're good to go! Super quick and easy lunch or dinner, you can keep all ingredients on hand in your fridge :)
