Crispy AF Baked Chicken Thighs
6-8 bone in, skin on chicken thighs
1-2 tablespoons avocado oil
salt and pepper to season
cast iron skillet (or glass baking dish)
Instructions:
1. Preheat oven to 425 degrees, leave cast iron skillet in oven while preheating
2. Use avocado oil to coat the chicken thighs and generously season both sides of chicken thighs with salt and pepper.

3. When the oven is preheated, remove the skillet and place chicken thighs skin side down into the skillet. Place in the oven on the middle rack.
4. After 25 minutes, remove the skillet from the oven, set the oven to broil and drain some of the liquid from the skillet.
5. Place the skillet back in the oven for another 5-8 minutes, keep an eye on it! It can burn quickly.
6. Remove from the oven and let sit for 5-10 minutes before serving.
*Serve with sweet potatoes and a salad for the perfect balanced meal!
